Kyokaiseki Lecture and Demonstration | ||||||||

On 17 and 18 February 2016, the Embassy of Japan in Malaysia organised Kyokaiseki (artistic and gracious Japanese seasonal cuisine) Lecture and Demonstration in the official residence of the Ambassador of Japan. This event was held under the theme of "umami", the essence of Japanese cuisine. The special lecturer Mr Yoshihiro Murata, President and Chef of Kikunoi, Three-Star Michelin Restaurant, Chairman of the NPO Japanese Culinary Academy, Goodwill Ambassador for Japanese Cuisine, Great Master of Traditional Japanese Cuisine, gave a lecture and demonstration on "dashi and umami in Japanese cuisine". He explained the fact that Japanese cuisine, which is structured with umami at its centre, is characterised by low fat and low calorie, unlike Western cuisine. This Lecture and Demonstration as attended by a number of guests, and they showed keen interest in Japanese cuisine and "umami".
